Mash-up of #shaksuka and @nigella.lawson oregano roasted baby aubergines going on today! With @merchantgourmet wheatberry mix giving it some carbs. Really tasty 😋 (perfect for my hangover!)
📝 slowly cook red onion, red pepper for 10 mins, add in crushed garlic, pinch each of caraway seeds, cumin seeds, cayenne pepper. After a few minutes, add tomato purée then tinned tomatoes 🍅 🍅 🍅... let it all simmer for 20 mins, adding a big pinch of sugar half-way through to sweeten slightly... meanwhile half your baby aubergines and roast them cut-side up, having mixed them first in olive oil and dried oregano...
Toast some blanched almonds, and heat up the grain mix, then roughly chop the almonds and some fresh parsley and mint.
Place it all up, and drizzle with a dash of balsamic glaze and crumbled feta!
