Salad stories:
I used to love ordering the pesto pasta deli salad from Café express. Although it was tasty it would leave me feeling kind of yucky. And I'm sure only God knows what the ingredients really are. This is kind of my mock version and it really hit the spot! 🥗 greens, veggies, grilled chicken, sunflower pumpkin hemp seed assortment, and topped with a little lemon and EVOO. For the pesto I blended Olive oil, walnuts, garlic, sea salt, basil, and a little bit of Parmesan cheese. I don't really cook with measurements but I definitely had way more walnuts and used less cheese than a standard pesto recipe. 😀

The most glorious fruit around right now 😍 #papaya !!! I’m actually on papaya island right now! Day 2! The flavor profiles of each papaya are really starting to amaze me! If you don’t know what a papaya island is, that means I am eating only papayas! I’ve committed to 1 week and started yesterday! An island 🌴 mono meal day or week is a great way to get some of the benefits of fasting without actually fasting :) I’m breastfeeding and not In a Position where I feel comfortable to fast, but my body needs a fast desperately. So this is a happy medium. I actually find it really easy to only eat papayas. They are my favorite local available fruit! I am only 2 days in and have already noticed a lot of positive things happening... probably the most positive bonus is the taste! With every papaya the flavor gets richer and I can taste it more deeply! It’s amazing what kinds of things can happen when we simplify!! I have noticed my breastmilk supply has not lessened but actually become a little bit more fruitful. And I have noticed Leia has less tummy bubbles and no spit up with this simple food. So all things are going well so far! 😊 I have been filming my experience too.. I’ll put the video out at the end of the week! I once attended a cooking demonstration by one of my favorite chefs @fabioviviani quite some time ago. One thing he told the class was that when you cook, you need to actually be attentive in the kitchen the whole time. He was making risotto, so at the moment he was referring to how some chefs on TV will tell you to stir and walk away and do other things while cooking, but if you want it to come out right, you need to pay attention to your food. And I like this piece of advice very much. I mean obviously I don’t cook risotto or fancy things, but even my small meals need my attention. I have realized that a lot of chefs or cooks will try to appeal to people by inspiring the sort of “set it and forget it” mentality so that we can multitask, but that’s where the mistakes happen. That’s where the pasta gets stuck to the pan or the veggies burn or the sauce doesn’t thicken how we’d like. So I thought about it today as I put my tv show on pause and focused all of my attention in the kitchen for a little while. Either way, if you’re already investing some time in the kitchen and in the grocery store, why not spend a bit more and actually enjoy what you are eating?

Starting my week with these beauties 😍 Wanted to prep some sweet breakfast muffins for the week so I whipped up some easy @choosing_balance mixed berry oat muffins! Hoping everyone has a great start to their week 🤩🙌🏻
Deeeets: strawberries, raspberries, blackberries, and blueberry stuffed oat muffins (recipe on @choosing_balance page!) only modifications I made was to sub cane sugar with 1 tbsp of honey and included flax seeds, chia seeds, and coconut chips!

The best and easiest hash browns ever.
1. Thaw a bag of @traderjoes hash browns.
2. Season them- I used garlic powder, onion powder, and smoked paprika.
3. Form them into hash browns.
4. Bake for 20 min at 400* then flip for another 10 min.
These are awesome because the only ingredient is potatoes. No weird stuff like the store bought ones, and they are delicious!

New week! Only did 4/7 clean week workouts last week but eating was good 6/7 days which is half the battle! The first photo is my lunch, the right photo is my breakfast!
I am keeping things stupid simple as I do what I can to get my butt back on track nutritionally. So I had hard boiled eggs and avocado for breakfast (it was so good!!) 😋😋, and now I’m having leftover steak for lunch with a tomato and broccoli salad over which I crumbled some queso fresco! .
.
I always find that starting out nice and easy helps me get back into things and not feel deprived. I hate nothing more than dieting and being hungry, so I don’t diet. I try to eat whole, unprocessed foods and eat until I feel full. It’s never easy and I’m still constantly learning, but I will always continue making an effort to do better! .

This was Cookie's plate for dinner yesterday. He was not in the mood to eat so I wanted to give him some variety to choose.
Clockwise from left; 1ghee wali chapati, ghee roasted potatoes with curry leaves, white rice with drumsticks Sambhar and mango chitraana. The walnut he was already munching on.
I had to run around with him,three change of locations and half an hour later he had eaten 75% of what was on the plate.. he didn't eat #MangoChitranna I am guessing he found it a little dry so I made a note of that for future. He insisted on eating the potatoes by himself and I let him.

Saturday was @horseshoemarket, then Sunday was @denver_flea AND @slowfooddenver - where this little guy ☝🏼 was absolutely devoured.

summer days // green plates! simple nutrition last night - lots of greens and veggies & some protein! ribeyes were on sale, so we had to jump on it! grilled them up and served them with fresh, green salads loaded with all of the veggies we had to end a relaxing afternoon by the pool in the sun. 🥒🥑🥕 also - found a baby bunny nest this weekend! the babies came out to play last night and they were SO cute 😭 I watched them hop away with their mama into the woods, but I hope they didn’t leave their nest for good because I love checking on them and leaving them little carrot shreds 💕

*** Chrysanthemum Tea *** I’ve grown up drinking this tea and now my kids drink it too. It’s refreshing and caffeine free, so great for the hot weather in Jakarta and a healthy alternative for kids to sugared juices etc. I use a coffee plunger bc I find it better than a tea pot due to all of the flower petals getting in the way, when I pour it. It’s great served hot or cold. *** Easy stir fry *** Plain & easy dinner tonight, just the way my kids like it. Usually my mum would stir fry beef with green beans (which I love) but I find it too rich and greasy for my kids. Instead I stir fry the beef and steam the beans separately. We ate this with an organic white and red rice mix. Recipe for stir fry - This is the same recipe I use for all stir fries- Olive oil, splash of fish sauce and half a teaspoon or more of sugar. One Pot Rice Cooker Chicken Rice 🍗 🍚 .
Some of you have asked about my rice cooker chicken rice that I posted on my IG stories few weeks back. .
So here is my humble recipe. I am not an expert in cooking, all my cooking are through guesstimate (hence took so long to get the measurement out), feel free to adjust the seasoning to your liking. Don’t forget to share with me your rice cooker chicken rice after you have try out! 🤗
Rice Cooker Chicken Rice
Ingredients (For 4 person)
(For the chicken)
4 chicken legs (with the thighs)
1.5 tablespoons of oyster sauce
1.5 tablespoon of chinese rice wine
1 tablespoon of sesame oil
1 inch of ginger, pound into juice.
1/2 chicken stock cube or 2 teaspoon chicken powder .
(For the rice)
2 cups of rice (uncooked)
8 cloves of garlic pressed and leave whole
1 inch of ginger (sliced)
Ground pepper (few dashes)
1.5 tablespoon of oyster sauce
1/2 chicken stock cube or 2 teaspoon chicken powder
4 pandan leaves tied into a knot (optional) .
(For garnish)
1 Japanese Cucumber (sliced) 🥒
3 Tomatoes (sliced) 🍅
Steps:
1. Rub oyster sauce, sesame oil, rice wine & ginger pulp plus juice on the chicken legs. Add few dashes of pepper. Keep in the fridge and marinate for at least 1 hour.
2. Wash and drain rice. Pour 2/3 of the usual amount of water into the rice. (As the chicken will have some juice after cooking).
3. Add chicken stock cube/powder, oyster sauce, ginger, garlic, pepper and pandan leaves.
4. Press start for the rice cooker and cook for 10 minutes.
5. After 10 minutes, the water will dry up. Arrange the chicken legs over the rice.
6. Start the cooking mode on the rice cooker again and let it cook.
7. When rice cooker turns off, let it sit for about 10 more minutes.
8. Remove the chicken from the rice cooker.
9. Fluff the rice with a rice spatula.
10. Serve chicken rice with cucumber and tomatoes.

This past weekend was hectic. We celebrated my mom’s birthday Friday night followed by errands + baby shower prep all day Saturday.

Two pop up showings for the house and a 6 hour road trip to shower Stephan’s sweet cousin and her baby boy on the way.

I had allll the excuses to push off prepping for this program but life will always happen.
