BAKED MAC N CHEESE
2 cups potatoes, 1/2 cup carrot, boiled til soft.
Blend with about 1 cup cooking water, more or less depending on the consistency you want.
Season with loads of nutritional yeast, a bit of salt, garlic powder, and a couple pickled jalapeños. Set aside.
In a skillet, sautee 1/2 onion, 1 carrot, and 1 stalk of celery, all finely diced. Add 1 spoonful of minced garlic, and a dash of salt to sweat everything out. Sautee until tender.
Stir in 1 box of cooked macaroni noodles.
Transfer to casserole dish, combine with potato/carrot "cheese", and top with crushed potato chips. Broil until golden and crispy on top.
