Sotong Masak hitam (squid in its own ink sauce). One of my all time favourite. Don’t be fooled in thinking that this dish isn’t spicy because of its colour. There is not a drop of soy sauce added, the beautiful dark colour is all from the squids’ own ink.
The squid ink intensifies the seafood flavour of the squid, giving it a natural sweetness to the dish. Add a bit of chilli paste, onion, garlic, ginger, galangal & lemongrass. Season with a splash of diluted tamarind paste and salt.
