In case you're paying attention to #janglikhana, I'm finally realising some long ago conceived ideas to incorporate botanicals of the Northeast into the cuisine of South Asia.
Black locust-infused curds moulded into dumplings for Ras malai. Instead of the traditional cardamom and/or saffron infusion, I added a touch of black locust syrup to the "sauce". For the garnish, hickory nuts and black walnuts joined the pistachios.
It's been fun picking apart the whys and hows of such a classic dessert. According to Wiki, home cooks make the cheese balls with powdered milk and oil. I've scoured a million pages, and talked to many folks, and no one I've come across does that. Not when fresh paneer tastes so damn delightful.
The most nerve-wracking part was letting my parents taste this iteration. I absolutely fucked with something that ain't broken, and they were still game. The verdict: it's as good as the original.
