A quick but very tasty pad Thai tonight... Sauce: 20g warmed almond butter, 2 tsp soy sauce, 1 tbsp sugar free sweet chilli sauce, mix in some water and mix together.
Veg: ginger, red pepper, mushrooms and courgette - stir fry in a pan (no oil needed)
Noodles: cook soba noodles as instructions say on the packet.
Mix it all together in the pan with the sauce and fry for 2-3 mins then enjoy!
