Scramble “eggs” (you guessed it, it’s tofu)
Dry tofu for 10 minutes in a clean, absorbent towel with something heavy on top, ,
In the meantime chop some tomatoes, onions, green and red peppers, add 3 Table spoons of canola oil on a frying pan and keep on medium heat. Add the veggies to it, wait 5 minutes and add a handful of kale and let it stir.
Place the semi dry tofu in a bowl and use a fork to crumble it into tiny pieces, add 2 tb spoons of paprika, 2 tb spoons of salt, 1 tb spoon of grounded black pepper and 4 table spoons of turmeric.
Once ready add your tofu to pant with all your veggies and let it cook for about 10 minutes.
Accompany with fruit and veggie sausages and you’ll have a great breakfast!
