😍 20-Minute Skinny Sriracha Shrimp and Broccoli

Yield: 4 servings Ingredients For the brown sauce: 4 tablespoons low-sodium soy sauce 1 tablespoon orange juice (fresh, preferably) 1 1/2 tablespoons sriracha hot sauce 1 tablespoon light brown sugar 1 tablespoon ginger, grated (you may also use bottled ginger if you cannot find fresh) 5 cloves garlic, minced 2 teaspoons sesame oil 1 teaspoon cornstarch Additional Ingredients: 1 1/2 tablespoons sesame oil 2 pounds medium shrimp, peeled and deveined (try to buy them already prepared this way to save on time) 4 cups (about 2 large heads) broccoli florets . Instructions For the Brown Sauce: In a small bowl combine the soy sauce, orange juice, sriracha, brown sugar, ginger, garlic, sesame oil, and cornstarch; whisk well to combine; set aside. To cook: Heat the sesame oil (1 1/2 tablespoons) in a large skillet over medium-high heat. Once warm, add in the shrimp and cook - flipping them once - until pink; about 3 minutes. Add in the broccoli and continue cooking the mixture, stirring frequently, until the broccoli is bright green and tender; about 3-4 minutes. Add in the sriracha soy mixture, stir well to coat the shrimp and broccoli, and cook for another 1-2 minutes, or until the sauce has thickened. Remove from heat and serve at once! This goes great with a small salad, rice, or even pasta (like lo mein).

😍πŸ₯ž Fluffy Greek Yoghurt and Mixed Berry Choc Chip Pancakes

Ingredients:
* 2 cups organic white self raising flour (or light spelt flour; whole wheat or all purpose flours)
* 2 teaspoons baking powder (1 tablespoon baking powder if using the other flour options)
* 2 tablespoons raw sugar
* ΒΌ teaspoon salt (1/2 teaspoon if using other flours)
* 2 large eggs
* 2Β½ tablespoons coconut oil, melted (or any oil)
* 1 tablespoon pure vanilla extract
* 1 cup plain non-fat Greek yogurt
* 1 cup unsweetened almond milk (or skim/low fat milk)
* β…“ cup fresh (or frozen) raspberries
* β…“ cup fresh (or frozen) blueberries
* ΒΌ cup dark/semi-sweet chocolate chips

Instructions:
1. Combine together all dry ingredients into a large mixing bowl and whisk. Set aside.
2. In a smaller bowl, combine together the eggs, oil, vanilla and yogurt. Whisk well until creamy and smooth. Add the milk, and mix until combined.
3. Pour the yoghurt mixture over the dry ingredients and stir slowly and gently with a wooden spoon until batter is just combined. The batter won't be smooth. Don't worry about any lumps. Fold the berries and the chocolate chips through the batter, being gentle again, not to break the berries.
4. Heat a pan/griddle on medium heat and spray with cooking oil spray, spreading it out evenly with your spatula. Using a ladle or ΒΌ cup measuring cup, pour batter onto pan to make pancakes. When batter is on the pan, spread it out a little with the back of your spoon to shape them.
5. Cook them for about 3-4 minutes, and check the underside before flipping. If golden, flip and cook for a further 2-3 minutes, or until cooked through. Bubbles don't form on these due to thickness. Repeat with remaining batter.
6. To serve, dust with a little icing sugar and top with extra berries!
