It’s the Wuyi oolong roasting time! During many rounds of roasting, we need to keep taking leaves in the roasting process and taste them. This is a way to evaluate the result of last rounds of roasting. Last night, we tasted 6 Rou-Gui in roasting. One of them tasted unusually dry. Our tea master Mr. Xue explained that this is because the last round of roasting mush have done in a hurry. The temperature in the roasting was too high. In the Wu-Yi mountains, leaves from the summer season, or the “second spring” will not be harvested for tea-making. Why? Because these leaves have a much shorter growing season, and this eventually leads to a flat and numb taste.

In the Wuyi Mountains, there is only one harvest season. After the harvest, tea plants would continue to grow. The new sprouts in the summer, like the one in the pic, is called “second spring” (or Er-Chun, Chinese: 二春茶). Fresh leaves from the “second spring” are much weaker and less ideal in quality. This is why unlike many other tea-producing regions that produce tea all year round, most Wuyi Mountains tea makers do not produce tea from the “second spring” to ensure the delivery of the quality.
When it comes to choosing the perfect tea, tea lovers should check out not where this tea comes from, but also when is this tea harvested. Remember, only the spring tea worths your money. 😄

This is a type of charcoal roasted Wuyi oolong (yancha) I have never tasted Dan Gui before, but it was very enjoyable

I brewed this tea 9.4g in my ~100mL chaozhou teapot and did flash steeps with boiling water

Smooth, woody, and sweet with a nice roasted chestnut aroma

Characteristically high minerality that coats and dries the mouth. Makes me crave the next cup of yancha

Very calming and focused energy. The qi is quite noticeable in this tea, especially at this high ratio

All in all a very enjoyable tea

This morning I read the 21st Verse. In it, Lao-tzu encourages the reader to try to stop striving and instead to arrive. Be here now.

I believe preparing and drinking tea is a wonderful way to remind you to be here now.

[June 12 Tea of the Day 3/3] The liquor of the Wuyi Banyan Rougui is simply divine. What I got was a zestiness accompanied by a slightly tingly sensation at the tip of the tongue. It reminded me of longans and lychees. It leaves a strong mintiness from the tongue to deep in the throat, which gets accentuated if you take deep out-breaths. The cooling sensation gradually turns into a slight peppery feeling in the stomach and warms the rest of the body, like fresh sansho. I’m perspiring. Thank goodness it’s a nice and cool morning in Kyoto.

[June 12 Tea of the Day 1/3] Wuyi Banyan Rougui from @exoteaque. These leaves are from trees cultivated at 1300-1500 metres in altitude. Othniel says it was roasted lightly at first, like a maocha, but he got the farmer to roast it till it reached 60% oxidisation levels.

Many tea lovers are interested in tea from wild tea plants. So, what is a wild tea plant? In tea-making, it’s called Cai-Cha, or 菜茶. Cai-Cha is not a tea plant. This term refers to a group of tea plants bred using seeds. This type of generative propagation is different from most other tea plants, which use vegetative propagation. Cai-Cha has a higher level of mutation and more complex properties. Most black tea producing tea plants in Tong-mu are actually this kind of wild plants. Our freshly roasted Will-Yi oolong tea (yancha). This is only the first of many more rounds of roasting. However, even after the whole roasting process ends, we still need to wait a few weeks before shipping to customers. The nature (not the temperature) of freshly roasted leaves is too “warm” to enjoy.
