I haven't been able to eat oats since May  and lately I've been craving something warm on these chilly mornings. This porridge may have just done the trick though! Introducing: Pumpkin Pie Amaranth Porridge . Happy Sunday, everyone!
1/4 cup amaranth
3/4 cup water
¼ cup nut milk (more to taste)
Pinch of salt
1/2 teaspoon pumpkin pie spice
Optional: 1 teaspoon maple syrup or coconut sugar.
Combine the amaranth and water in a small saucepan, and bring to a boil. Reduce the heat to low, cover and simmer 30 minutes. Stir every once in a while to prevent sticking.
Stir in the nut milk, syrup or coconut sugar, pinch of salt, and pumpkin pie spice. Stir until the porridge is creamy. Enjoy!!
