Tonkotsu ramen at Hakata Shoryuken Ramen with an egg 🥚and wavy noodles 🍜. ATTENTION: REAL RAMEN REVIEW INCOMING ❗️Swipe right for noodle pull action shots wao! Amid all the hype surrounding the opening of Tokyo export Konjiki Ramen, a solid ramen spot a 10 mins walk down the street may be good to keep in mind when faced with L 🕐I 🕑N🕒E🕓S. A little preliminary research on blogto suggested the broth to be extremely rich and a little bit sweet (🤔🍬🤔). The front of the menu states that pork bones are boiled on high heat, prompting the marrow in the bones to come out into the broth and WOWWWWWIE! This broth tastes like the pork equivalent of chicken schmaltz; not overtly sweet, but rounded and super creamy with a mineral fullness indeed reminiscent of bone marrow. Sips are deeply satisfying on a cold day. Like the rugged no-nonsense brother of hip LA bone broth sold in coffee cups from a pop up across the street from Starbucks. The chewy noodles pair beautifully, the unctuous nature of the broth almost perfuming the palate without overwhelming it. The same eye to quality also applies to the toppings: while often overlooked, the bean sprouts here are thicc, fresh and delicious. The sliced cloud ear fungus is similarly thicc, both vegetal offerings providing an essential textural antithesis to the onslaught of CARBS AND MEAT that ramen can sometimes be. The green onions were plentiful and consistently sliced 👌But the cha-shu and the jammy egg tho- WOW! The slices of pork belly were thin and deeply seasoned, deeply soy sauce esque with deep notes of umami complementing the just-chewy-enough tender pork. Tasted like bacon, but chewy, more refined and circular. The egg was similarly deeply seasoned, a pleasant surprise. While many places obtain a similarly sensual jammy yolk-tender white interplay with their eggs, seldom does the flavour charge into the Ramen Ring so feistily. While many eggs are more of the "lightly seasoned but still tasting mostly like an egg", this was "IVE FINALLY EMERGED FROM MY DEEP MARINATION AND IM READY TO RUMBLEEE". Like the loud Thor thunder clash to a subtle Batman sneak attack, if you will. Overall, delicious 🤤
