Growing up my mom made some amazing granola. I would still be eating it today if it weren't for all the butter and brown sugar! Most granolas have some fat and sweetener, ours was like a dessert it had so much. That's what made it so good!😍 Unfortunately the granola I grew up with does not fit my current lifestyle, so I had to find another. I stumbled across a "recipe" from one of @marthastewart contributors that got me hooked. I can't remember how long ago it was, or who the maker was, but it sounded so simple I had to try. Basically she suggested for a simple healthy granola just use oats as the base, then add whatever mix ins you like to use. For the fat and sugars, she suggested only a small amount of oil, Maple syrup or honey.. That's it. So here's the recipe I've been using:
12 cups old fashioned oats. I used @quaker
1/2 cup whole wheat pastry flour
1/2 cup nonfat powdered milk
1/2 cup sliced almonds
1/2 unsalted cashew pieces
In separate bowl mix:
1/4 cup canola oil
1/4 cup pure Maple syrup
1teaspoon canola
1 tablespoon dark brown sugar
Combine the 2. Layer on sheet pan. Bake at 350°for 20 minutes, stirring occasionally. So this is my recipe. If you need more oil (butter or coconut oil are great too) add it. If you like it more sweet, add more sweetener. I eat mine with whatever fruit I've got, raisins or craisins. I also love @lovemysilk undersweetened vanilla milk. I don't drink it plain, but love it in my cereal and smoothies! I believe it's 1 point for 1 cup. This is a high calorie food, so I usually have about 1/3 cup! Anyway, I thought I would pass on a recipe that could help those crazy mornings to be a little more simple and a little more healthy. .
