Making Prawn Paste Chicken "Har Cheong Gai" 虾酱鸡
One of my favourite Zi Char stall dish
Time: Part 1- 5 min. Part 2- 20 mins
Difficulty: Intermediate .
Part 1 Marinate the chicken
Step 1: Add 2 tsp prawn paste to a bowl of about 10 x chicken wings
Step 2: Add 1 tsp sugar, 1 tsp sesame oil, half tsp pepper and 1 tsp oyster sauce .
Step 3: Mix well in the bowl and put into the fridge for 4 hours at least. .
Part 2 Frying
Step 4: In a separate bowl, add 6 tsp all purpose flour, 6 tsp potato / corn flour, 1/4 tsp baking powder, 1 beaten egg, 50ml water and mix it.
The batter should be smooth and thick. If too watery cannot work.
Step 5: Pour the chicken into this mixture and coat it evenly
Step 6: Heat a pan with 200 ml of oil .
Step 7: Pan fry the chicken for 4 mins on each sides till golden brown before taking it out.
