Deconstructed food gets a bad rap, but why?? My garden peppers are never pretty and perfect, so I made deconstructed stuffed peppers with some delicious peppers that weren’t cut out for being stuffed. I roasted the mix of peppers and created a sauce out of garlic, orange cherry tomatoes, fresh basil and oregano. I mixed the sauce, Parmesan cheese, cut up roasted peppers, quinoa with beef. You could easily leave out the beef for a filling meal. Even my husband who is not a quinoa fan LOVED this!
