Things have been pretty busy around here the last couple of weeks so I haven’t been online much but this low-carb broccoli and cauliflower soup I made turned out so good that I just had to share it with you. The best part about it is that it was made with frozen broccoli and cauliflower.
It’s one of those dishes that I just threw a bit of this and a bit of that in a pot because that’s what I had in my kitchen. So I don’t have a recipe for it so I’ll try to do my best to write it exactly how I made it.
Low carb creamy broccoli and cauliflower soup
One small bag of broccoli
One small bag of cauliflower
Enough chicken broth to cover the broccoli and cauliflower
1/4 c of dried Minced onions
2 TBLS Butter
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp @simplegirlsite Dry Bouillon Base (but you can use any of your own favorite low-carb chicken bouillon)
4 oz Cream Cheese
8 oz Shredded Sharp Cheddar Cheese
In a soup pot on the stove, add the butter, broccoli, cauliflower, onion, bouillon, onion powder, garlic powder, and enough chicken broth to cover everything. Bring to a boil and then reduce to a simmer and continue to cook until the cauliflower and broccoli are tender. Add salt-and-pepper if needed. Or even your favorite no sugar added seasoning salt would be a great addition. I then took an immersion blender and puréed everything together, except I did leave a few chunks of broccoli and cauliflower. I returned the pot to the stove on low and added the cream cheese and sharp cheddar and just stir it until everything melts together. Add more salt or pepper if needed. I also added a few drops of Louisiana hot sauce to every bowl before serving.
If you want your soup super extra creamy you can also add half-and-half or heavy cream.
