It’s been +34C here, so I’ve been avoiding turning on the oven or even just the stove top... So I made chickpea salad sandwiches for dinner tonight!
And these were SO GOOD - the everything bagel really kicked it up a notch.
These are super easy to make - no recipe required. I just mashed some chickpeas, added shredded carrot, red onion, celery and chives and a dollop of vegan mayo. For spices, I added dill, paprika, salt and pepper.
And then in the sandwich, I’ve got thinly sliced tomato, radish and a handful of pea shoots! Mmmmmm
