Tofu Scramble!! Easy way to get a ton of veggies in at breakfast, and a great replacement for eggs if you're a plant based eater :)
1 package of extra firm organic tofu (I use sprouted for better digestions)
1 head of garlic, minced
1 large yellow onion, diced
3 handfuls of mushrooms, sliced
2 bell peppers, sliced thin
4-5 handfuls of spinach
1 tsp garlic powder
1 tsp paprika
2 tsp turmeric
A hefty squeeze of siracha :)
Saute garlic until it begins to brown. Add onions and peppers, and cook for 4-5 minutes until onions are translucent.
Add remaining veggies, and sauce for about 5 more minutes. Add some water as you go (I prefer to cook without oil!).
Drain tofu well. Crumble with hands directly into the pan! Add all of the spices and mix well, let the mixture cook for about 2 more minutes.
Add the spinach and stir until it is completely cooked (about a minute or two). It will seem like a lot at first, but it quickly disappears into 1/10 of the original volume!
Add siracha! I also enjoy eating with fresh tomatoes, avocado, and cilantro on top. This goes well with almost any veggie combination, so modify to your preference!
It is also DELICIOUS in breakfast tacos
