Between Earth & Moon
Cook, artisans lacquerer, farmer share a visceral link with organic materials . It is the support of our discipline because we are first and foremost passers, transformers, we collect it, listen to it and put everything that we live, our senses, our knowledge, our philosophy at its disposal, in order to prepare it in what it has of most beautiful, most evocative, but especially most essential.
Sow and accompany, shaping and lacquering, cooking and assembling are verbs born from the same belly, the instinct of life, and as craftsmen, we are fully committed to glorify the virtuous use of the world, because reaping, transforming, creating, it is releasing an ascending energy, from the ground to the sky, from materials to sentiments, as a response to the one that descend from the moon.
It is the moon, in a way, who watches over this meal, because it rhythm, by its effect on the living materials, the calendar of Mr Akagi, as well as the farmers, fishermen, breeders and winegrowers.
So, the least of the things that we could do, Ikehata San, Hirata San and myself was to imagine a menu through its prism, as a timid “thank you” and try by this imaginary gesture to bring you a little closer to it, in weightlessness, between Earth and moon. »
