PESTO WITH ALMONDS AND PECORINO ROMANO. At a supermarket in the village, staff recommend to me their new pecorino romano. Additionally, he gave me a leaflet with recipe sugestion for pecorino. Because I wanted to use up my basil from the the balcony, I made one of the recipes in the booklet with basil 1. Clean 100g fresh basil. Put it in a kitchen machine with 50g pealed and hopped almonds, 100ml olive oil, 1 piece pf garlic and some salt and turn into a paste.
2. Grate 50g pecorino romano and add into the paste. Mix well.
3. Serve with pasta like linguine and Italian wine. I had a glass of dry rose wine. Before the pesto I enjoyed slices of pecorino as a starter and pecorino's powerful aroma went well with red wine. Thus I thought that some kinds of white wine could be too weak for this pesto. Next time I'll search a white wine made from black grapes for a dish with pecorino.
