OKARA.. the wonderful byproduct of making Tofu, but we think it’s sad that it’s the less glamorised sister to all things soya- because it’s so BRILLIANT!
Okara is the fibrous residue of the soya bean, and most people don’t know what it is, let alone all the awesome things you can do with it! It is super high in protein, vitamins & fibres, & the best part of it? .. is that it’s the golden ticket to being able to make a product (tofu) that is completely non- waste producing!
Here at the’artyvegan we like getting experimental with foods, SO: we like it in a number of ways - oven baked little balls, drizzled in maple syrup that (when crunchy) can be added to cereal (like a granola); mixed into falafel mixes, to make delicious falafel, or our absolute favourite - a warm salad! We pan fry our Okara with spring onions, ginger, chilli, garlic, and add things we like: carrots, shiitake mushrooms, potato, sesame oil, and soya sauce! and EAT it as a warm, or later cold salad!
