When I was younger and just learning how to cook (think 17-20 yrs old and only knowing how to cook scrambled eggs), I would often lean on spice mixes to help me out, Club house specifically. I stocked up on their spice blends and started learning. These spices will always have a place in my heart because they remind me of the early cooking days (RIP to all of those meals I burned). So you can imagine how excited I was when they reached out to me to partner up and create a recipe using their spices. With that, here is my Apple Oat Crumble recipe 🍎
Apple Crumble Recipe:
5 granny Smith apples
1/3 cup maple syrup
1/2 tsp Club house vanilla extract
1.5 - 2 tbsp lemon juice
1 tbsp cornstarch + 2 tbsp water mixed (or 2 tsp arrowroot powder w/ 2 tbsp water mixed)
1 tsp Club house apple pie spice mix
2 pinches salt.
1 cup @bobsredmill rolled oats
1/4 cup @bobsredmill gluten free flour
1/4 cup @bobsredmill almond flour
1/3 cup + 2 tbsp coconut sugar
1/2 tsp Club house apple pie spice mixture
2 pinches cinnamon
3 pinches salt
1/2 cup coconut oil melted but not too hot (unsalted butter works too)
1/2 cup chopped pecans.
1. Preheat oven to 350 degrees. Next, de-core, peel and cut apples into small chunks and place in a medium bowl.
2. In a small bowl, whisk together maple syrup, vanilla, lemon juice, apple pie spice mix and salt. Taste test and adjust accordingly. Add this to apples and stir. Then, in another small bowl, mix together cornstarch or arrowroot powder with the water and add to apples and stir to coat.
3. Pour apple mixture into a baking pan. Before adding the top crumble, bake apples for 20 minutes so that they can get nice and soft (this helps prevent the crumble from burning or cooking up too much). 4. After the apples bake, take pan out of oven and top with the oat crumble. Bake for another 15-20 minutes and check on it. If its bubbling and the crumble is a nice golden color, its finished. If not, bake for another 5 minutes. .
Top with coconut whipped cream or coconut ice cream (or both😏). .
