Growing up my mother always tried new recipes and introduced us to new and different foods.
Memories of my mother cooking and baking are still so vivid to me as if it occurred yesterday. My cooking, baking, and creativity is a direct influence of my mother. This is how she displayed love and it has been how I have learned to display love. I love to cook but I love to cook for my friends and others more than myself. To me, food is love.
On Sundays, holidays, or when one of us asked we ate off the "fancy" dishes or the good china. We set the table (with folded napkins), my father said grace, we each said a bible verse and had pear salad. My favorite Sunday meal was rump roast, rice and gravy, green beans, homemade rolls, and PEAR SALAD.
I always loved helping my mama prepare meals and preparing the pear salad was one of my favorite things. I thought the pear salad was so fancy. It was a half of a pear (canned) on a piece of iceberg lettuce with a dollop of mayo and shredded cheddar cheese. We shredded the cheese ourselves on a cheese grater. I don't remember being able to purchase pre-shredded cheese back then. I decided to put Beyonce up (Upgrade) my mama's pear salad. Wine poached pear served on a bed of mixed greens with a dollop of Greek yogurt, candied nuts, shredded gruyere, pomegranate seeds drizzled with a balsamic vinaigrette.
