#ketokungpaochicken in a sheet pan! I miss Asian food so bad ... no judgement, but I miss grabbing Panda Express with some fried rice and chow mein! This creation by @keto.connect REALLY helped! I added more seasonings bc the sauce seemed flat to me probably bc I used liquid aminos?? I ended up adding more soy sauce, chili peppers, garlic, and ginger. I also didn’t like the “chemical-tasting” sweetness of the stevia and did a combo of stevia & swerve. BTW, my sauce took forever to reduce & thicken so it didn’t coat the chicken as well. I cooked it all in sesame oil vs coconut oil just to have a more sesame flavor.
MEAL PREP PRO TIP: I hate cooking things on my stove top bc I make meals in batches, it takes a long time to cook meat through, and the oil pops all over so I made this in my oven. After dicing the raw chicken, I tossed in sesame oil, a lil salt & pepper, garlic & ginger. Spread it all on a jelly roll pan or cookie sheet with sides bc there will be some liquid released from the chicken. Broil on high for 15 min. Flip 10 min in just to brown the other side. While the chicken is cooking, I cut my veggies, placed on a sheet pan. Drizzle with avocado oil, salt & pepper. I then roasted the veggies for 15 min at 400 degrees. While it was cooking, I made the sauce on the stove top and let it reduce. Once done, I just moved the veggies to the chicken, and then drizzle the sauce on. i bought 2 large sheet pans from Costco business center for $6 each and had been a lifesaver for meal prepping. If you are s Costco member, you can shop at their business center. They typically have the same items as regular Costco but some even bulkier items like restaurant size seasonings/ingredients. ——————————————-
