Sweet potato bagels.

- 250 gr. sweet potato puree;
- 180 ml. hot almond milk (or water);
- 2 eggs;
- 2 tbsp. sugar;
- 2 tbsp. date honey;
- 3 tbsp. vegetable oil;
- 1.5 tbsp. dry yeast;
- 1/3 tsp. salts;
- 1/3 tsp. pumpkin pie spice (cinnamon, ginger, cloves, nutmeg);
- 4-4,5 cups flour.
Boil one sweet potato, cool a sweet potato, cut the skin and grind with a blender in puree. Heat almond milk, pour into a large bowl, add puree, sugar, honey, 1 egg + 1 egg white, yeast, vegetable oil, 1 cup flour and mix until homogeneous. Leave for 10 minutes. Add salt, spices, gradually adding flour to knead the dough. Ready to make a dough in a bowl, put the dough in a bowl greased with vegetable oil, cover with a food film, top with a towel and leave for an hour. Form baigels ( 10 pieces), cover with a towel and leave for 20-25 minutes. Grease with, yolk, sprinkle (sesame, flax seed, oat flakes), bake in a preheated oven for 18-20 minutes at 180 degrees.
