Meals on a Monday [= So everyone talks meal prep Monday but what do you do when you have a family? What do you do when you’re busy and you did not get your meal prep done? Prep works amazing for some people. And it doesn’t work at all for others. So what do you do if you dont fall into the meal prep family category?
Doomed? Far from. You find healthy alternatives. Yes I am a trainer, but I am also a mom and a live in girlfriends. Honestly, my kids sometimes struggle with healthy food choices. So this is one of my FAVOURITE last minute go to’s on a busy night.
Heat oven to 375F. In a pan, i used a grill skillet here, heat pan and some olive oil.
Once the pan is hot, add in chicken (I use tenders as they stay juicy, cook fast, and are inexpensive). Cook on one side till browned, flip, let cook another 2 minutes. Once outside is cooked, put skillet into oven to continue cooking chicken.
In another skillet/pan, add olive oil, peppers, onions, and a minced garlic clove. Sauté till desired.
Pull chicken from oven, carefully slice into bitesize pieces and toss veg and chicken together.
Why is this my favourite? Easy. The kids end up with fajitas. I add my chicken/veg over lettuce and add avocado, salsa, a little cheese and plain Greek yogurt and get a yummy fajita bowl!
