Here's what she says: "This is a meal you are going to want to make after the kids go to bed. Risotto takes a lot of time and love to prepare. It's the perfect meal to make with your significant other for a date night in. There's only a few simple fresh ingredients (shrimp, fennel, onion, garlic, aborio rice, lemon, white wine, and arugula). It takes about an hour to make, but between all the stirring, it's fun to spend time together in the kitchen sipping wine and listening to some tunes. #MEALMONDAY Chocolate Avacado desert INGREDIENTS:
* 1 and 1/4 cup coconut sugar, divided
* 1/2 cup cocoa powder, divided
* 1 cup spelt flour (or oat flour*)
* 1 and 1/2 teaspoons baking soda
* 1/2 teaspoon salt
* 1/2 cup non-dairy milk
* 2 teaspoons vanilla extract
* 1/3 cup avocado (about 1 small ripe avocado)
* 1 and 1/4 cups hot water (or coffee)
* strawberries and dairy-free vanilla ice cream for serving
DIRECTIONS:
Preheat the oven to 350ยฐF then lightly grease an 9 x 9โ€ baking dish.
In a small bowl, combine 1/2 cup coconut sugar and 1/4 cup cocoa powder. Whisk together and set aside.
In a large bowl, combine 1/4 cup cocoa powder, 1 cup spelt flour, 3/4 cup coconut sugar, 1 and 1/2 teaspoons baking soda, and salt. Whisk together and set aside.
In a blender, combine 1/2 cup milk, 2 teaspoons vanilla, and 1/3 cup avocado. Blend for about 5 seconds, until smooth. Itโ€™s okay if there are a few bits of avocado that are unblended. Pour the wet ingredients into the large bowl and fold together until well-combined. The batter will seem very dry, thatโ€™s normal, just keep folding until all of the flour has been incorporated.
Transfer the batter to the greased baking dish. Use a spatula to smooth out along the bottom, then sprinkle the sugar and cocoa mixture from the small bowl over top. Pour hot water evenly over the top layer so that all of the cocoa powder/coconut sugar mixture is covered. Do not stir.
Bake for 30-35 minutes then remove and allow to cool for at least 15 minutes. Serve warm with hot fudge on the bottom of the cake, dairy-free ice cream and strawberries #vegan #makingthymeforhealth

Herb crusted cauliflower streaks with romesco sauce

INGREDIENTS:
FOR THE CAULIFLOWER STEAKS
* 1 large head cauliflower (about 2lbs)
* 1/2 cup plain unsweetened non-dairy milk
* 3 tablespoons chickpea flour
* 1/4 cup spelt flour*
* 3/4 cup panko breadcrumbs*
* 2 teaspoons fresh or dried herbs (I used oregano and thyme)
* Salt and freshly ground pepper, to taste
* high heat oil spray
FOR THE ROMESCO SAUCE
* 16 ounces roasted red peppers
* 1 tablespoon tomato paste
* 1/2 cup sliced almonds
* 2 garlic cloves
* 1/4 cup parsley
* juice of 1/2 lemon
* salt & pepper, to taste
DIRECTIONS:
Preheat oven to 400ยบF and line a rimmed baking sheet with parchment paper.
Using a large sharp knife, trim the leaves and cut off the very bottom of the stem from the head of cauliflower. Slice the cauliflower in half down the middle, through the stem. Take one half of the cauliflower and cut it into 1-inch slices. You should end up with 2-3 steaks, with some florets falling from the sides. Repeat with the other half of the cauliflower.
In a wide shallow bowl thatโ€™s large enough to dip the cauliflower steaks, whisk together the chickpea flour and milk. Pour the flour onto a large plate and combine the breadcrumbs, herbs, salt and pepper (and vegan parmesan/nutritional yeast, if desired) on a second large plate.
Dredge the cauliflower steaks in the flour, dip them in the chickpea flour mixture, and then press them into the panko mixture. Use your hands to make sure the cauliflower is fully coated on all sides with each. Place the steaks on the prepared baking sheet and spray liberally with high heat oil.
Bake the steaks for 15 minutes, then flip them over and spray them with more oil. Bake for another 15 minutes, or until golden brown with tender florets.
Meanwhile, prepare romesco sauce by combining all of the ingredients in a blender and blending until mostly smooth. I like mine to have a little texture but you are free to blend it until your desired texture is reached.
Once cauliflower is done baking, sprinkle with chopped herbs and a squeeze of lemon juice. Serve warm with romesco sauce and enjoy!

1 (15-ounce) can chickpeas, drained and rinsed
3 garlic cloves
1/2 cup rolled oats*
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
2 tablespoons nutritional yeast
juice of 1/2 lemon
1ย cup shredded zucchini
32 ounces marinara
8 ounces whole grain pasta

In the bowl of a food processor, combine the drained and rinsed chickpeas, garlic cloves,ย and rolled oats. Pulse for about 5-10 seconds, until finely chopped. When you press the mixture between your fingers, it should hold together. Transfer to a large bowl along with the dried herbs, salt, nutritional yeast, lemon juice and shredded zucchini. Do not use more than 1 cup of shredded zucchini. Stir together until well-combined. If the mixture is too wet to handle, add a little flour (you can grind extra oats into a flour)ย or nutritional yeast to help absorb excess moisture.
Preheat the oven to 375ยฐF then line a baking sheet with parchment paper. Using your hands, scoop out on heaping tablespoon of the zucchini mixture at a time and roll into 12 separate balls. Arrange on the baking sheet a few inches apart then bake in the oven for 25 minutes.ย Meanwhile, cook pasta as directed.
Once the zucchini balls are light golden brown, remove them from the oven and set aside. Serve warm over cooked pasta with marinara sauce. Garnish with fresh basil and enjoy!

Happy #mondaymeals! Today's meal idea is from contributor Hilary and is an easy baked chicken parm recipe from her mama. Here's what she says: "My mom made this dish all of the time growing up, and now Iโ€™m making it for my kids. I like it for three main reasons: (1) Itโ€™s baked, not fried. We try to keep things healthy in our house, so I avoid frying. Baking the chicken puts a healthier spin on chicken parm, which is usually fried. (2) Protein is very hit or miss in our house, but this my kids will eat without complaint because it tastes like pizza. (3) I generally dislike cooking meat because itโ€™s messy and time consuming (not a chef here), but this is as easy as it gets."

Recipe: Put thin chicken cutlets in an egg wash and then coat in seasoned bread crumbs. Place them on a baking sheet lightly coated with oil. Bake at 350 for approximately 30 minutes, flipping halfway through. After the chicken is cooked, add your favorite tomato sauce (heat it first) and cheese (I use sliced Muenster cheese for something different). Put back into the oven on broil for just a couple of minutes until the cheese bubbles and starts to turn brown. Voila!
