Trust me when I say, I wouldn’t post about meatless meatballs unless they were reeeeallllllly good! Eggplant #meatballs are pretty easy to make, taste amazing, and fill you right up - think of them as the most tender meatball you’ve ever had. Chop some eggplant (if you have a food processor, you could make the pieces big and blitz later), boil in salted water until tender, drain and mix with an egg, salt, pepper, garlic powder, grated parm, breadcrumbs, and fresh parsley - then roll into “meatballs”. Make a sauce with canned tomatoes, salt, pepper, olive oil, and fresh garlic (throw in fresh basil if you have!). Spoon on top and top with grated parsley, then bake at 350 for 30 min!
