Tonight’s dinner was SO. FILLING! 🤤😱 I’ve been meaning to make @naturally_nina_’s Spicy Mexican Beans for ages and I finally got around to it with a can of four bean mix I’ve had for yonks! Nina posted the recipe for the beans on an old post of hers so let me know if you want me to link you to it! 💖 Super easy, just simmered away while I prepped everything else for my bowl!
Also included in the bowl: quinoa mixed with bulgar wheat and a little nooch, corn, red onion, raw carrot (leftover work snacks), a little tomato salsa and some @followyourheart mozzarella! PLUS some #reducedhaul tofu from IGA I cubes, crumbed and baked! 🤤🤤🤤
So happily full from the avocado, quinoa and beans - great to use up a heap of fridge and pantry things too! Too easy!
Quick personal update: tomorrow is my first full day off of work in almost three weeks and I am SO ready 😵 Also our Christmas tree is now up but it’s in the spot where I normally take my food photos, SO I had to take this in our bedroom 😂😂 Lastly, thank you for all the positive love on my last post, good to be posting less frequently but with better content from now 💖✨
