Haven’t made this dinner in months so pulled out the recipe to make it again!!!! Joy, yumminess & positivity in a bowl. SO FLAVOURFUL & GOOD. No idea why it disappeared or so long

Caribbean Stirfry (Adapted From a Hairy Bikers Cook Book!)
• Cut Chicken Breast Meat or Quorn Fillets into strips or chunks.
• Marinate in mix of the juice of 1 lemon, 1sp Medium or Hot Curry Powder, 2 tbsp Low sodium Soy Sauce, 1-2 Garlic Cloves, Salt & Pepper to taste - me & Mum usually leave them for about 20 mins or longer while preparing everything else. • Chop 1 Onion & add to a large frying pan with the marinated Chicken with a little bit of olive oil, to fry until cooked. • Chop Carrots, Broccoli, Cauliflower, Bell Pepper & add them to the pan, along with a handful of green beans & peas - cook & fry until softened. • Place on a low heat & simmer for a while to let the flavours develop to desired strength! • At the very end, add baby spinach & let it wilt in before serving!
• Works amazing with Brown Rice, Naan Bread or Sweet Potato Mash!
