Haven’t made this dinner in months so pulled out the recipe to make it again!!!! Joy, yumminess & positivity in a bowl. SO FLAVOURFUL & GOOD. No idea why it disappeared or so long 🤤🙈

Caribbean Stirfry (Adapted From a Hairy Bikers Cook Book!) 🍲💛
• Cut Chicken Breast Meat or Quorn Fillets into strips or chunks.
• Marinate in mix of the juice of 1 lemon, 1sp Medium or Hot Curry Powder, 2 tbsp Low sodium Soy Sauce, 1-2 Garlic Cloves, Salt & Pepper to taste - me & Mum usually leave them for about 20 mins or longer while preparing everything else. • Chop 1 Onion & add to a large frying pan with the marinated Chicken with a little bit of olive oil, to fry until cooked. • Chop Carrots, Broccoli, Cauliflower, Bell Pepper & add them to the pan, along with a handful of green beans & peas - cook & fry until softened. • Place on a low heat & simmer for a while to let the flavours develop to desired strength! • At the very end, add baby spinach & let it wilt in before serving!
• Works amazing with Brown Rice, Naan Bread or Sweet Potato Mash!

THE BEST EFO RIRO (SPINACH SOUP) RECIPE 🤣💃🏻💃🏻 Who will try this?
INGREDIENTS
• Spinach (Cut into pieces)
• Blended pepper (Roughly blended)
• Blended crayfish
• Dried prawns
• Stock fish
• Locust beans (Iru)
• Palm oil for frying
• Beef stock

COOKING DIRECTIONS
• Heat Palm oil in a pot
• Add Onions
• Add blended pepper
• Add blended crayfish and dried Prawns
• Add Dried Prawns
• Add seasoning
• Cook pepper until oil is floated
• Add Beef/Assorted/Fish (Whichever you desire)
• Add vegetables and cook with pot covered. • Cook for 5 minutes and your yummy vegetable soup is ready!

Ps: You need not add water because the vegetable will produce water when covered and heated.

Regrann from @sweetfran - Alguien dijo mini Muffins veganos??

✨Ingredientes:
-2 platanos maduros🍌grandes(cambur)
-1 1/2 taza de avena en polvo.
-2 cdas de miel. (Reemplazable por algún syrup,opción vegana)
-2 cdtas polvos de hornear.
-2 cdtas vinagre (en mi caso de manzana)
-opcional canela y algun endulzante, yo no puse nada, con los plátanos y miel quedo bien.
***Si la masa esta muyyy seca agregar 1/4 taza de leche vegetal o agua.
****Para el glaseado de chocolate disolver 1cda de cacao en polvo sin azucar en 1cda de miel fundida. (Opción vegana syrup)
Para el blanco disolver 1 cda de leche en polvo vegetal con 1cda de miel fundida👌.
✨Preparación:
1-Poner en la licuadora los plátanos, licuar bien hasta que quede un tipo batido espumoso, luego agregar la miel fundida y seguir licuando, agregar la avena y licuar. Debe quedar una masa densa pero no muuuyyy seca, de ser así , agregar 1/4 taza de leche vegetal o agua.
2-Disolver los polvos de hornear en el vinagre, se hará un efecto efervescente, incorporar a la masa revolviendo manualmente.
3-Verter la masa en moldes de muffins, en mi caso ocupe moldes pequeños.
4-Cocinar 20min en horno precalentado a 180grs C.
Esperar que enfríen y desmoldar.
5-Poner el glaseado por encima.

Banana Oat Muffins
These have become a favorite in my home. No flour, no refined sugar, no oil or butter.

INGREDIENTS
1 cup plain Greek yogurt
2 medium ripe bananas (1 cup mashed)
2 large eggs
2 cups rolled oats (old fashioned or quick)
1/4 c coconut sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup chocolate chips, mini or regular

INSTRUCTIONS
1. Preheat oven to 400°F and prepare a muffin pan by spraying the cavities with cooking spray or lining them with paper liners**. Set aside.
2. Add all the ingredients except for the chocolate chips to a blender or food processor or blender and process on high until the oats are broken down and batter is smooth and creamy. Stir in chocolate chips by hand.
3. Pour batter into prepared muffin pan, filling each cavity until it is about 3/4 full. Optional: sprinkle a few chocolate chips over the top of each muffin.
4. Bake for 15-20 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing. Store in an air-tight container for up to a week.

Notes ** If using paper liners, you'll want to spray them with cooking spray as well, since the lack of oil in these muffins could make them stick to the liners after baking.

Makes 12 - 15 muffins

Lemon Chicken Skillet Dinner

~Ingredients:
12 ounces baby red potatoes, halved
1 tablespoon olive oil, divided
4 (6-ounce) skinless, boneless chicken breast halves, pounded to 3/4-inch thickness
3/4 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
2 thyme sprigs
4 ounces cremini mushrooms, quartered
1 tablespoon chopped fresh thyme
1/4 cup whole milk
5 teaspoons all-purpose flour
1 3/4 cups unsalted chicken stock (such as Swanson)
8 very thin lemon slices
1 (8-ounce) package trimmed haricots verts (French green beans)
2 tablespoons chopped fresh flat-leaf parsley

~Directions:
1. Preheat oven to 450°.
2. Place potatoes in a medium saucepan; cover with water. Bring to a boil, and simmer 12 minutes or until tender. Drain.
3. Heat a large ovenproof skillet over medium-high heat. Add 1 teaspoon oil to pan. Sprinkle chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper. Add chicken and thyme sprigs to pan; cook 5 minutes or until chicken is browned. Turn chicken over. Place pan in oven; bake at 450° for 10 minutes or until chicken is done. Remove chicken from pan.
4. Return pan to medium-high heat. Add remaining 2 teaspoons oil. Add potatoes, cut sides down; mushrooms; and 1 tablespoon thyme; cook 3 minutes or until browned, stirring once. Combine milk and flour in a small bowl, stirring with a whisk. Add remaining salt, remaining pepper, flour mixture, stock, lemon, and beans to pan; simmer 1 minute or until slightly thickened. Add chicken; cover, reduce heat, and simmer 3 minutes or until beans are crisp-tender. Sprinkle with parsley.

Steam your tempeh in a little water and then add some kind of sauce and let it cook for a few more minutes. Steaming it helps bring out the flavor and the texture is really nice then. Plus, because of the water, I didn’t have to add any oil to the pan either. Happy Friday! 💛☺️

#hummus di ceci facilissimo 💃🏻
Ingredienti:
🔸70 gr di ceci secchi (200 gr se già cotti)
🔸2 cucchiaini di tahin chiaro
🔸2 cucchiai di olio evo
🔸1/2 cucchiaino di sale marino integrale
🔸il succo di 1/2 limone
🔸 1 cucchiaino di paprika (facoltativo)
Mettere i ceci in acqua tiepida con 2 cm di alga kombu per 12 ore circa e poi cuocerli in acqua bollente per 45’ circa (saltare questo passaggio se usate quelli già cotti, in questo caso sciacquare molto bene).
In un mixer mettere i ceci cotti, l’olio, il sale, la crema tahin, la paprika e il succo di limone, azionare fino ad ottenere una crema liscia (potrebbe servire aggiungere 20-30 ml di acqua).
Gustare a piacere😃😋
Ps. Io lo faccio senza aglio, la paprika può essere sostituita da qualsiasi altra spezia vi piaccia😎

🔸70 g dried chickpeas (200 gr paraboiled chickpeas)
🔸2 tsp tahin
🔸2 tbsp olive oil
🔸1/2 tsp salt
🔸juice of half lemon
🔸1 tsp paprika (only if you want)
Put chickpeas in water for 12 hours with a piece of kombu seaweed and after boil them in water for 45’ (do not this step if you use paraboiled chickpeas, only wash them very well!).
Now put chickpeas, salt, tahin, paprika, olive oil and lemon juice in a mixer and activate it as long as you have obtained a creamy product (maybe you have to add 20-30 ml of water).
Enjoy it😋😃
