It’s pretty much a given that I will always have at least one dessert in the house. My dessert of choice this week was Peach & Almond Tart with Whipped Mascarpone. Now, I had heard from others who made this recipe that it didn’t turn out great, so I had backup desserts around so I wouldn’t be left sugarless. Priorities, right? But I actually really enjoyed this! I had to try the whipped mascarpone twice before I got it right, but once it all came together, it was quite delicious! Tip: beat the mascarpone by itself for a minute or so before adding the cream. It incorporates better that way.
I had extra pie crust, so I sliced up some more peaches, cooked them in the leftover poaching liquid, and made homemade pop tarts. I may never go back. They were SO good...especially with a cup of coffee.
Overall, I’d call this a success!
