I only used the ingredients I had available so this is my take on nontraditional Korean Bibimbap. I made pickled carrots, cucumber & cabbage. (Soaked them in water + ACV + salt + sugar for 1 hr) Then I cooked the chickpeas with gochujang paste. I also added caramelized onion because why not. As for the rice, I added a bit of sesame oil & a pinch of salt. And as per Mommy Tang, I showered it with sesame seeds! Protein protein protein!!!
