Let's get some inspiration flowing ⛆
It is the month everyone makes Noah's pudding (aka #aşure) in Turkey :) as it is a tradition and believed to bring prosperity to households and, as we all know, it is ALSO the pumpkin season See where I'm going with this? I decided to try this naturally sweetened, super healthy and nutritious dessert with pumpkin! The result is surprisingly amazing! too bad Noah was short of pumpkin at his ship

160 g uncooked buckwheat
1 organic canned chickpeas (400 g including aquafaba)
180 g pumpkin puree
150 g dried apricots
60 g raisins
1 tsp cinnamon
1 tsp pumpkin pie spice
1.Soak the buckwheat in water for at least 8 hours and afterwards drain the remaining water.
2.Zest the orange, set aside. Cut the orange in half, juice it and set aside. Insert 10 cloves into the remaining orange halves.
3.Cook the buckwheat in a pot with 350 ml water and the clove-pinned orange halves.
4.At the same time soak apricots and raisins in water for ~30 minutes and drain their water.
5.When the buckwheat starts getting softer, add the canned chickpeas, bring to a boil.
6.Add the pumpkin pure and the orange juice, bring to a boil while stirring consistently.
7.Cut the dried apricots in small pieces and add them to the pot together with the raisins.
8.Take the orange halves out of the pot.
9.Add the spices.
For serving: Decorate your pudding with pomegranate seeds, ground pistachios, chopped walnuts, dried figs, shredded coconut etc.
Serving size: 10 (150 gr each serving)
Per serving w/o toppings: 174 kcal, 34.1g carbs, 1.7g fat, 5g protein
