125 gr butter in room temperature, 1 teaglass oil, 1 tbsp yogurt, 1 glass milk, 3.5 glasses flour, 2 tbsp semolina, 1.5 tsp baking powder, 1/2 glass crushed walnuts. .
Syrup: 2 glasses sugar, 3 glasses water, 1 coffeespoon lemon juice. Serve with 2 tbsp pistachios.
Direction: Prepare the syrup for kalburabastı by cooking sugar and water in a deep pot. Stir occassionally until the consistency gets thicker. This takes about 20 minutes on medium heat. Once its consistency is right, add lemon juice in it and let it simmer for 2-3 more minutes then set the syrup to cool in room temperature.For the dough, transfer the softened butter in a deep mixing bowl. Add milk, oil, semolina, yogurt then carefully the flour and mix to combine. Finally add the baking powder and knead for five minutes. Cover the mixing bowl with a stretch film and put in the fridge for 20 minutes.Divide the dough into walnut sized portions then form round pieces. Press each piece down on a sieve (or a tool as you can see in the video) to give kalburabastı its specific look. Place one whole walnut in the center of each dessert then roll it on tge sieve again. Arrange the raw desserts on the baking sheet. Bake in the preheated oven at 180°C for 25 minutes. Pour the cooled syrup over the hot dessert carefully and gradually. Let the desserts rest in room temperature. Decorate kalburabastı with pistachios and serve. Enjoy!
