May cake challenge. Even though I always tell @lovecatscakery that her desire to make a loaf pan carrot cake is not allowed in the challenge, she agreed to let me make mini cupcakes for May. I made succulent cupcakes for a plant swap at @shopkanibal and learned a few things. 1- although delicious, I'll never make Swiss meringue buttercream with a hand mixer again. It took over an hour and I wanted to cry. 2- if I do make it again I need to be ready to decorate with it right away because the whole business of rewhipping it for 15 minutes is not for me. 3- I need to bake smaller cupcakes so the succulents fit better on top, rather than floating on top. And finally...don't serve cupcakes outside on a hot sunny day. May cake challenge complete with 11 days to spare! I feel free!
