Another day, another chicken breast! I took inspiration from Chicken Kiev and stuffed this breast with a bit of Swiss and lean ham, rubbed with a little mayo and Parmesan, and lightly coated in seasoned breadcrumbs. Served with egg noodles dressed in a little butter, dill, lemon, pasta water, and parmesan. I was ravenous and am totally satisfied now - worth saving my points for!
