I can’t describe in words how absolutely perfect this backstrap turned out last night! It always tastes a little better when you brought it home from the woods yourself, but this turned out perfect! My wife made a blue cheese sauce for it and neither of us even tried it, this venison was just perfect! #goliasgrills#indianavenison .

Last nights dinner was absolutely amazing! We worked out the kinks of using the green egg ( the temp reached 42 out here and the though of the oven made me to hot to handle) We cooked this whole head of cauliflower always organic of course and fresh from the amazing @klippersorganics. recipe 1 head of Cauliflower
Olive oil or Avocado oil
Butter or Ghee
Parsley, chopped we used extra virgin olive oil ( dairy free for me ) cooked it in the cast iron skillet for 1 hour covered in tin foil

My brisket brings all the boys to the yard, and they're like, it’s better than yours.
Nothing quite beats a brisket when it flops. But I ain’t talking about it being bad or a belly flop (guilty as charged) I’m talking about the finger flop. A good brisket slice should flop over on each side of your finger. This one was perfectly cooked, had a slight smoke ring but I still sliced it a little took thick. Just a personal preference of mine, but ooh la la the flavor was divine. The judges gave my brisket flop a 9.5. Lol.
