Looong work days call for ultra quick dinners. On paper, this recipe had about 20 ingredients!! Your girl is most definitely not whipping this up after 12 hours of work. But! Prepping all the separate components ahead of time essentially turns into: pull containers out of fridge, assemble, enjoy.
Bowl components: a bed of mixed greens, banh mi roasted chickpeas, pickled radishes + carrots, croutons, avocado crema, and all my favorite sliced green things: cilantro, scallion, jalapeño, and cucumber.
