Still in season: PEAR! Roast it in COCONUT and top with homemade date sirup.
INGREDIENTS: 1 cup activated rolled oats, 1 cup water, 1 cup soy milk, sweetener of your choice (I used date paste), 1 tsp chia seeds, 1 pear, 1/2 tsp cinnamon, 1-2 tsp dessicated coconut,.. INSTRUCTIONS: Soak the oats 12+ hours in water with a dash of apple cider vinegar over night. Drain oats in the morning, cook 3 minutes with water and soy milk, when oats are cooked, ad 1/2 tsp cinnamon, ad sweetener (or date paste and a pinch of salt, add water if needed. In a pan roast diced pear with a dash of water, cook for 2-3 minutes, then add coconut and stir. Serve porridge in a bowl, top it with the coconut pear & chia seeds and DATE SIRUP*.
Just cover dates with boiling water for 10 minutes (or overnight), blend with the soaked in water. Approximately 1,5 cup water for 1 cup dates.
