There was a bit of a learning curve with my new @oonihq pizza oven displayed here by my first amoeba shaped pizza that I had difficulty getting off the peel. It had tomato, fresh mozzarella, basil, anchovies, and capers. The second one, was more shapely and THICC as the kids would say, and it had cheddar, mozzarella, basil, marinated figs, and prosciutto. This week’s 🚨MEAL PREP ALERT 🚨 was inspired by a Cantonese steamed chicken recipe that I was told about and asked to recreate. So, I did what anyone would do: researched a bunch of different recipes on the internet, then proceed to follow exactly 0 of them and bastardize the entire dish. If you tell me about a sandwich from Peru where half the contents are fried, you better believe I’m gonna go ahead and make it. This Pan con Chicharrones rocked my world last night. I put some pork belly in the sous vide for 12 hours, chilled it down, then fried it in duck fat because why wouldn’t I? Then, I threw the chicharrones onto a French roll with a healthy slathering of Peruvian “Green Sauce” (I can’t figure out what the hell it’s actually called), homemade sweet potato chips, and a red onion “salsa” to complete one of the best goddamn sandwiches I’ve ever eaten. My stories are not working today for some reason so here’s a brief and extremely unhelpful look at how I’m doing my turkey this year. For the breasts, I peeled off the skin in one large piece, removed the breasts from the torso, butterflied them, smeared them with an herb paste, then rolled ‘em back up in their own skin before tying the whole thing up, seasoning the outside with a salt and sugar (and a little MSG. Don’t tell anyone!) mixture before vacuum sealing it to get sous vide’d come Thursday. After that, I took the whole legs, seasoned them with the same salt/sugar/MSG combo, threw ‘em in a vac bag with whole herbs, garlic, and peppercorns so I can confit those bad boys with my good friend, Sous, as well. More cooking to come tomorrow and Thursday and hopefully Instagram doesn’t hate me when I try to document those things. If no one else will, I’d like to pat myself on the back for staying committed to this regional cooking deal all year while FSU’s season has been doing it’s best impression of Los Angeles right now. If we’re making food from Indiana and we’re not deep frying pretty much everything, then we’re in danger of being haunted by the ghost of Abraham Lincoln himself. Through my research, I was able to figure out that people from Indiana have an affinity for eating Breaded Pork Tenderloin Sandwiches that include a pounded out tenderloin that is approximately FAR TOO FUCKING BIG for the bun, so here you go. As an appetizer I made Fried Sauerkraut Balls with a Charred Scallion and Calabrian Chili Aioli because at some point, an unnamed genius from the Midwest decided to just take the brats, sauerkraut, onions, and mustard, mash em all together, and fry them in a cauldron of bubbling, liquid fat. For dessert, I continued my streak of making more pies in one football season than I have in my entire life combined with a Hoosier Pie, which is 80% sugar and topped with more sugar. One of the tough parts about this regional cooking for FSU’s opponents thing (aside from the act of actually watching the games this season) is that we play 2-4 different teams from North Carolina every season, and there’s not exactly a very deep bench of North Carolina-specific foods. So for today’s shit-storm of a game, I repurposed some ingredients from the Wake Forest game a couple a weeks ago and mashed ‘em all together with a general southern staple: fried chicken. Instead of sweet potato pie, I took some of those sweet potatoes and made Sweet Potato Sage Biscuits out of them, into which I threw my Sweet Tea-Brined Fried Chicken with an Herbed Goat Cheese, Chili Honey Butter, and homemade Dill Pickles. Would you believe me if I told you that in honor of FSU’s win over Wake Forest, I made this almost textbook North Carolina-style Smoked Pulled Pork using only a sous vide machine and my oven; without ever touching a smoker? Of course you would. I respect you guys too much to lie to you about something like that, and you know damn well that if I DID own a smoker, I’d be bragging about it incessantly. I shredded that bad boy up, and ate it between some buns with a little bit of Apple Slaw and a healthy amount of a homemade Cheerwine BBQ Sauce to make that sandwich more North Carolina than the Wright brothers doing donuts in an Andrew Jackson-sponsored NASCAR on the floor of the Tar Heel’s home court at the Dean Smith Center. With FSU on a bye week, the menu for today was a dealer’s choice, and this dealer just cooked and ate so much Mexican food that he hates himself. I found some banana leaves at the Asian market earlier this week so I felt obligated to buy a whole boneless lamb leg, dry brine it in smoked salt for 24 hours, marinade it in Chile adobo for another 24 hours, then cook it in said banana leaves for 4 more hours and assemble some of the best goddamn Lamb Barbacoa Tacos you’d ever wanna eat so fast you forget how many of them there actually were. To go along with them, I made a Roasted Tomatillo Salsa, the undisputed king of the Salsa’s, and Beer Queso that I will eat until I’m sick if I don’t walk away from it. Will the leftovers become nachos later?
