Quick question? Am I the only one who burns lentils almost every time?! 😯I thought I was doing so well this morning and was multitasking between exercise and cooking. The lentils were almost done and I went back to do another part of my circuit and I forgot to go back and check them. Darn! I had to cook another batch for this lentil salad🤗
This is definitely one of my favorite go-to vegan meals. It's also a huge treat for my Dad. He loves all Middle Eastern cuisine.
These two are super simple dishes that pair well together. They're quick and delicious as well.

The lentil salad is 2 cups of lentils cooked in 3.5 cups water. Add tomato, parsley, Persian 🥒 and bell pepper.
1/3 cup olive oil ( I used @caoliveranch)
1/3 cup ACV
1 tsp sea salt
1/4 tsp pepper
2 tsp dried basil
Crushed garlic if you wish.
