Prepped lunches this week because I know it’s going to be busy with the holiday coming up. @hilaryseatwell veggie patty (believe it or not this was my 1st time trying these‼️), greens, watermelon radishes, snap peas, roasted yellow cauliflower, and cabbage from @wildlyfermented. #meatlessmonday The dressing is lemon juice, @pasolivo lemon olive oil, tahini, salt, and pepper.

🍞Scones, scones and more scones! Scones with jam and coconut yoghurt is my idea of a great Sunday lunch! 🙆

These scones are made using @viberi_organic white chocolate-covered freeze-dried blackcurrants, or dark chocolate-covered soft-dried blackcurrants for a vegan version (I ate the dark chocolate ones, and my family enjoyed the white chocolate! 🙌🌱)

These blackcurrants are the perfect indulgent snack - I found myself munching down on them while making this recipe because they are THAT GOOD! 😁 Anyway, you're probably wanting the recipe now, so here it is:

WHITE CHOCOLATE-COVERED BLACKCURRANT SCONES
.
●3 cups flour
●2 1/2 tsp baking powder
●1/2 cup coconut sugar
●1 cup almond milk
●2 tbsp lemon juice
●2 tbsp coconut oil, soft
● 1/3 cup @viberi_organic Ruby Blackcurrants (can substitute for @viberi_organic's Noir or Cacao varieties for vegan option 😉)

1. Preheat oven to 180°C. Line a baking tray with baking paper.
2. In a bowl, combine flour, baking powder and coconut sugar.
3. Make a well and add plant-based milk and lemon juice. Stir and cut with a table knife until combined. Rub in the coconut oil.
4. On a lightly flowered surface, gently knead the dough by flattening it out, then folding it, repeating this several times to achieve a flaky texture when baked.
5. Form a thick circle with the dough and transfer it to the prepared baking tray. Cut the dough into eight triangles, separate them a little to give them room to expand, and bake in the oven for 25-30 minutes.
6. Slice in half, and serve with jam and coconut yoghurt!

I have been so off the rails with my eating in November and noticed symptoms my naturopath was trying to help heal reappear. I decided it is time for me to treat my body well and eliminate the foods that don’t love me . It is hard, takes a lot of planning and not super easy while traveling but I started this insta account to help motivate myself, so here is my journey. —
🍽️: Berry pumpkin muffin breakfast bar. The recipe is from @paleomg but I modified it slightly as it called for blueberries but I only had strawberries. I also added ground pumpkin seeds to the batter to increase the protein & zinc. Such a delicious start to the day 🤤

My Pie Pizzeria Romana serves up some pretty good Roman style pizza. Plus, the slices are large and cheap. My fave was the Grandma Nonna. The Buffalo Chicken is decent and the Truffle Oil + Mushroom needs more/better quality truffle oil (can't expect that tho given the price) 🍕🍅🧀🍗🍄

🍴Smoked Salmon Panzanella
Turn your fall harvest into the perfect salad. Packed with charred veggies and garlic bread, slices of smoked salmon, fresh tomatoes and basil are what put this salad on everyone's "make-again" list!
👉Serves 8
🔘INGREDIENTS
For the Salad
▪️2 tomatoes, seeded and diced
▪️2 red bell peppers, seeded, deveined and cut into 4 pieces
▪️2 small Japanese eggplant, cut lengthwise into planks 1/4 inch thick
▪️1 small yellow onion, cut crosswise into slices 1/4 inch thick
▪️1 zucchini, cut crosswise into slices 1/4 inch thick
▪️5 thick slices sourdough bread
olive oil to brush vegetables and bread
▪️1 garlic clove, peeled
▪️1/4 cup fresh basil leaves, thinly sliced
salt and freshly ground pepper to taste
For the Dressing
▪️1/2 cup olive oil
▪️1 1/2 teaspoon fresh thyme
▪️1 medium garlic clove, chopped
▪️1/4 cup balsamic vinegar
▪️1 tablespoon honey
▪️1 teaspoon salt
▪️1/2 teaspoon freshly ground pepper
▪️1 cup diced #Verlasso Smoked Salmon
▪️1/2 cup chopped Italian parsley
DIRECTIONS
1️⃣Preheat grill to medium-high heat. Clean and oil grill.
2️⃣Brush pepper, eggplant, onion, and zucchini with olive oil and season with salt and pepper to taste. Grill vegetables over direct heat until tender, 4 to 6 minutes, turning once halfway through grilling time. Brush bread slices with olive oil. Grill over direct heat until lightly toasted, turning once. Remove bread from grill and rub with the garlic clove lightly. Season bread with salt and pepper to taste.
3️⃣Cut grilled vegetables and bread into 1/4 inch cubes and place in a large bowl. Add diced tomatoes and basil, and season with salt and pepper to taste.
4️⃣In a small bowl, combine the dressing ingredients. Add to vegetable mixture and toss gently to coat. Fold in smoked salmon and parsley. Serve immediately.
