Ah, PIZZA! Such a great ‘cheat’ meal isn’t it? What if I told you there are ways to avoid making pizza a ‘cheat’ meal and still have it taste AMAZING?! (and no, I’m not talking about cauliflower crust)
I have been playing around with a way to get fresh, crispy, restaurant-tasting pizza (without a pizza-oven…or making your own dough…or being at the mercy of delivery pizza with cheap, preservative-laden ingredients)? Here’s my shortcut…and it’s gooooood!
Health benefits? This recipe provides fiber, protein, vitamin D, vitamin K, immune system support from the garlic in the pesto, and a little metabolism boost from the chilies!
I thought it would be a ‘cheat’ meal, but it’s so fresh, it’s not really cheating
1 flat pita bread (preferable whole wheat)
A few spoons of basil pesto (store-bought or my recipe here: https://www.livinglekker.com/classic-basil-pesto
Fresh buffalo mozzarella, broken into bite size pieces
Grated sharp cheddar (or oude kaas for the Dutch)
Fresh spinach leaves
Crushed pepper /dried chili flakes (for a metabolism boost)
Preheat oven to 500 F / 260 C (yes, you want it HOT)
Spread pesto over pita bread, then top as desired with cheese, spinach and chilies.
Place directly on the oven rack (so air circulates below the pita as well)
Cook for 5-8 minutes, or until cheese is melted and pita crust starts to brown on the edges. -
It’s seriously that fast, fresh, easy and yummy!
COOK’S NOTE: ovens vary (some reach 550, some only reach 450) - so just check it after 5 min. You’ll need a few more minutes if your oven is maxed at 450.
