Happy Friday! Today I'm sharing a simple plant based recipe that can be enjoyed as an appetizer, side dish, or paired with salad, greens, or other cooked green veggies for a complete meal.
It’s my Mushroom and Cannellini Bean vegan “Quiche”
✔️ ¾ cup minced white button mushrooms
✔️ ¼ cup minced white onion
✔️ ½ teaspoon minced garlic
✔️ 1 tablespoon virgin coconut oil (you can also use EVOO)
✔️ ½ cup cannellini beans
✔️ ¼ cup organic low-sodium vegetable broth
✔️ 1/16 teaspoon sea salt (optional)
✔️ 1/16 teaspoon each ground black
✔️ 1/16 teaspoon ground white pepper
In a medium pan over low heat, sauté mushrooms, onion, and garlic in oil until onions are translucent. Set aside. In a small food processor puree beans with broth, salt, and peppers. Pour bean mixture into a small (5-inch in diameter, 2-inch deep) pie tin. Fold in mushroom mixture. Bake in preheated 350 F oven for 25 minutes.
