Hearty❤ soups & toasted bread, name a better duo I'll wait~~
ITS SOUP SEASON🍁 and I'm celebrating with a traditional ~Cannellini Bean Soup~ straight from the Bulgarian kitchen! It's hearty, comforting, and UNIQUE! It's made with an unusual spice: Spearmint🌿 Sounds strange but it's very popular in the mountainous regions where it's grown and it gives bean dishes an amazing aroma! It's a must tryyy!
The soup is also very thiccc so one bowl is super filling especially when eaten with bread, ☝️which I highly recommend. Aaand try it with a dollop of hummus too if you're feelin bold😏 you won't regret it~
You'll need 1 chopped onion, 2 diced carrots, 2 diced stalks of celery, 2 cans cannellini beans, 2 tbsp. paprika, 1 tbsp olive oil, 1/2 tbsp salt, and 1 tbsp. dry spearmint.
On a medium burner, heat up the onion with the oil and cook until it becomes translucent. Add the paprika, then 1/2 cup water. And cook for 5 min. Then add in your raw veggies with 1 cup water and cook until they are soft. Then add the beans (straight from can) and 1/3 cup water. Simmer for 5 min and add the spearmint and salt! ENJOYY❤
