Sooo controversial opinion but carrots>salmon any damn day My current snack o' choice is @miyokos_kitchen un-lox your dreams vegan cream cheese, homemade carrot "lox," fresh dill and a few generous pinches of salt.
I’ve always wanted to try making carrot “lox” but the stars had never aligned...until this past weekend
Having company was just what I needed to motivate me. Okay, so I totally didn’t do it “right”. There are all these carrot lox recipes that have tons of steps and ingredients, but I didn’t have time, nor said ingredients
I literally just shaved some carrots, put them in sea salted water spiked with a little white vinegar, and left in the fridge overnight. Yeah. That’s all I did. And you know what? It was f***ing delicious
We also had some drama with our vegan cream cheese, so it was @lantanafoods yellow lentil hummus (THE BEST HUMMUS EVER OMG) to the rescue. Popped a few capers on there and topped with a ribbon of “lox” and we had a delicious, healthy breakfast!

Porkkala - carrot lox
1kg large carrots (don’t peel)
600g rock salt
4tbsp canola oil
2tbsp liquid smoke
1tbsp rice vinegar
1tsp agave suryp
Cover the bottom of oven pan with salt. Place carrots and cover with the rest of the salt. Bake in the oven at 175°C for 90min and let cool down completely.
Mix the oil, liquid smoke, vinegar and suryp. Process the carrots into thin slices and mix with the liquids. Leave to season in the fridge for 2-3 days with tight lock. Best served on rye bread with cream ”cheese” and fresh ground black pepper.
I’ve been so curious to try carrot “lox” and finally had a chance to at @turfliving - this toast was seriously delicious. Loved the fresh dill and capers also the cashew cream cheese was perfectly creamy and not too tangy/acidic. The lox is made by wrapping carrots in nori (and maybe with other seasoning?) and baking slow&low.

More canapés! This is my vegan take on smoked salmon blinis. Oven smoked Carrot Lox & @violife_foods cream cheese on homemade blinis topped with seaweed infused chia seed caviar. First time making carrot lox and it’s definitely going to be a regular thing! #reducetarian
