Fire...the one thing that changed humankind forever. Ever since the first human roasted that hunk of Woolly Mammoth at the dawn of time, the culinary landscape has never been the same.
There are many cooks out there that love the virtues of induction cooking but to me I love gas cooking. Gas cooking gives me an extra sense of control and feel that I can never get with induction. My gas burner tops off at an impressive 20,000 BTU which is excellent for a home range but I wanted to up the ante. I saw a post by @eater that showed how to get that "Dragon's Breath" flame which is central to wok cooking. All for only $1.50 and a little sweat equity, you too can have a flame worthy even for Daenerys Targaryen of @gameofthrones !
The key is to make the opening just about the size of the circumference of cover plate of your burner. Too big and the flame is too low, too small and not enough flame will reach a big enough area. You also need to make enough air intake holes so the circulation feeds the flames. Not enough and the flames will be diminished. As an extra step I also recommend is to grind the edges to prevent slicing your fingers off as the edges can get pretty sharp.
Once done, install it over your burner and voila! Serious concentrated gas flames perfect for wok cooking! Just remember your total BTU output will remain the same. My 20K BTU flame will still be 20K BTU. You are just shifting all the flames to the "dead zone" center which is exactly where you want the heat in wok cooking.
For this hack I'm gonna give it a 9/10 as I have get to try it out in a real world situation. But I have a feeling that this is gonna make cooking a lot more fun:). Any thoughts and or suggestions? Let me know! Happy woking!
