How cute is this chia mango parfait?!
No added sugars and nutrient packed 😊🥄
Layered with chia pudding, plain yogurt, frozen mango chunks, and pumpkin seeds
For the chia layer: can be prepared overnight by soaking in almond milk or I had time on the morning to make some on the stove.
Ingredients:
Chia seeds, almond milk, cinnamon, vanilla
Method: heat 3/4 cup of almond milk with 1/4 a cup of chia seeds on medium, stir occasionally until it thickens (about 10 mins)

Pasta con pesto de pistacho y zucchini 🍝🥒 🌟Ingredientes
Para la pasta:
1 paquete de pasta 
2 zucchini finamente cortados en medias lunas
8 onzas de mozzarella en cubos 
1/4 taza pistachos sin cascara
Hojas de albahaca para adornar
Para el pesto de pistacho:
1 1/2 tazas de hojas frescas de albahaca
1 taza de hojas de menta fresca
1/2 taza de hojas frescas de orégano
1/2 taza pistachos sin cascara
2 dientes de ajo picados
Zumo y ralladura de 1 limón grande
1/2 taza de aceite de ajonjolí Bioessens
1/4 cucharadita de sal marina, o al gusto 🥣Instrucciones
Cocina la pasta según las instrucciones del paquete. 
Mientras la pasta se está cocinando, prepara el pesto. Coloca todos los ingredientes, excepto el jugo de limón y el aceite de ajonjolí en el tazón de un procesador de alimentos. Pulsa varias veces, luego procesa hasta que esté finamente picado. Con el motor en marcha, agrega el jugo de limón y el aceite de ajonjolí a través del orificio de alimentación. Procesa hasta que quede suave. Deja de lado o refrigera hasta que esté listo para usar. (Puede hacerse con hasta 3-4 días de anticipación)
Escurre la pasta, reserva 1/2 taza del agua de cocción y vuelve a colocarla en la olla. Agrega el zucchini rebanado y el pesto. Mezcla para cubrir. Agrega un poco del agua reservada, si es necesario, para adelgazar la salsa.
Prueba y añade más sal si la necesita. Transfiere a un tazón grande para servir y cubre con la mozzarella, los pistachos adicionales y las hojas de albahaca. Sirve caliente, a temperatura ambiente o refrigerado. *Via HelloGlow

Simple Chia Pudding:
2c. (1 can) Full Fat Coconut Milk
1-2 Tablespoons liquid sweetener of choice (I used maple syrup)
1/2 tsp vanilla
1/4 c. chia seeds .
Mix first 3 ingredients together. I place them in a mason jar and just shake them up until well blended. Then add your chia seeds. Place in fridge and let sit overnight. Shake it up again before you serve it. Top with whatever you like! 📸 is paleo granola, blueberries and shredded coconut. Enjoy!
Makes enough for several servings. Will keep in the fridge for several days.

I love chia pudding and I love the colour pink, so this morning I thought I’d combine the two and make pink dragonfruit chia pudding!
I prepped the chia last night with some soy milk and pink dragonfruit powder, and then topped it this morning with some mango, berries, nuts and cinnamon!! Pro-tip for breakfast bowls is to put more toppings underneath the main event, so I had the rest of the mango I used and some cornflakes hidden underneath 😏 Then you can stir it all together and have a messy bowl of goodness 🙌
Perfect start to the end of the week (and the end of the final official week of my degree 😰)
