The Brussels were the star of this bowl! Roasted in 2 tbsp each of balsamic, honey and olive oil with salt and pepper on 180c for 20 minutes. Keeping them company was paprika roasted sweet potato, roasted cherry tomatoes, puy lentils, avocado, bean sprouts, spinach and toasted pumpkin seeds. Delicious, healthy, vegan and low fat. #plantbased
Stuffed aubergine with harissa chickpeas. A really delicious smokey flavour from the harissa, crunch from toasted pine nuts and the texture of the aubergine flesh worked really nicely together. Halve and score the aubergines, drizzle with oil, salt and pepper then bane on high for 25 minutes.
