I made it to day 30 of #nosoy! I had a few slip ups, but once I got used to reading labels more carefully, it was much easier. I'm adding soy back into my diet for the next 7-30 days (only once per day) to see if there any changes, then eliminated again for another 30. Honestly, I felt pretty good during the challenge & it was probably from the reduced amount of junk food I was eating. It's easy for me to let crappy foods back into my diet (especially sweets! 🙈), so I really have to work to make sure that I'm eating healthfully most of the time. My cycle wasn't as painful as it had been in past months of heavy soy consumption (even when I was eating super clean & working out 6 days/week earlier this year, I had one of the worst periods of my life). I may not even do a full 30 days of introducing soy back & just continue to eat #soyfree for a while.
Along that note, this picture is of my dinner tonight. I decided to do a 30 day salad challenge because I need to ramp up the amount of veggies I eat - especially as the holidays draw near. Today is day 2 of that challenge & my dinner is my twist on the Mexicali Vegan Salad from Chop't: spinach, romaine, sweet potato, black beans, tomatoes, celery, cucumbers, falafel, broccoli, avocado, jalapeño, palm hearts & pistachios. They forgot my lime juice as (was going to use for dressing), so I'm taking it as a sign & trying to create juicy salads that don't need dressing.
