The Squash Invasion!!!! Tumeric & Ginger Chicken Soup....a quickie Soup for Squash Season.
This soup was made with no real measurements, but it was so easy, and so delicious I don’t want to forget it!
4 organic chicken thighs (remove skin from 2 thighs)
6 stalks of celery, cut up
1/4 sweet onion
ginger powder, to taste
turmeric powder, to taste
garlic powder, to taste
salt, to taste
red pepper flakes, to taste
a bunch of squash, &
water, enough water to more than cover ingredients, but not so much water that soup tastes watered down. I eyeball it. ☝🏻most important ingredient.....LOVE
Bring everything to a boil, except SQUASH. A high simmer for 1 1/2 hours. I added enough water to start, and didn’t need to add extra water, which could have weakened my flavor.
The last 10 minutes of cooking, I added my Squash. Taste and adjust seasonings if needed.
Served with a squeeze of lemon & Sliced avocado.
