Just made cornbread two different ways and both turned out pretty great!
The darker one was made with a cornmeal and gluten-free flour mix and some raw coconut sugar, the lighter one with only cornmeal and cornflour, chickpea water, plant milk, salt, baking powder and no coconut sugar.
Key ingredients were corn meal, corn flour or other fine flour, unsweetened soy milk (or any plant-based milk), olive oil, salt and baking powder. Simple and super easy! The nice thing is that you can replace liquids and adjust salt or sugar (or eliminate sugar completely) to appeal to your liking. Anything can be made vegan and healthier than the original recipe, just adjust accordingly. Hope you try it!
